With regard to your question, I think that it might be helpful to read some of the more basic information on art therapy to start. Judy Rubin wrote a book called ART THERAPY: AN INTRODUCTION; Susan Makin wrote A CONSUMER'S GUIDE TO ART THERAPY; I wrote a paperback called THE ART THERAPY SOURCEBOOK. All are on Amazon.com and other online booksellers and each can help you to understand more about how art therapists think and work. There are so many ways that art therapists work it is impossible to describe all of them here on this e-board. Hope this helps you to begin your search for more info.
