    You might want to look at Rawley Silver's early work; she addressed some issues about working with cognitive development thru art therapy...Occupational therapists work with lots of learning disabilities & neurological problems with therapy called sensory integration- lots of kinesthetic and vestibular work, involving multi-sensory stimulation- might be useful to you also and speaks to using movement with art materials, etc.
