You could contact the American Art Therapy Association to get a list of references. Art therapy draws from many disciplines to inform and illustrate the way art making is therapeutic, so if you broaden your search a little, there will be hundreds of relevant titles. You may have to extract the meaning and significance of some videos, as they may not have been created with art therapists in mind.For example, biographical videos about artists often contain little gems. The fact that an instance of healing through art did not involve and art therapist does not make it any less vluable for art therapy.
The world around you is full of interesting examples. Don't limit your search to the obvious references that have already been established in the field of art therapy.
