I have a suspicion the research you are looking for may be difficult to find in published journals and books. Unpublished thesis research might be more fruitful - you may be able to access that by contacting the training programs directly. There are useful links in that regard, plus links to bibliographic references by category, available at the British Columbia Art Therapy Association webpage at http://www.arttherapy.bc.ca (which I webmaster). Your other option, it it will meet your research needs, is to interview art therapists who have done this work. Some art as preventative health work is done by artists and not art therapists so it may not be well documented in the clinical way you might need. I am assuming you have done a PsychInfo search of the appropriate journals (eg: 'Art Therapy' and 'The Arts in Psychotherapy".
