Mark,
I believe that you can get a PhD in Art Therapy through the Union Institute in Cincinnati, Ohio. It is an independent study structure that you can do at any place you would like, though you do have to go there a few times a year. Several of the faculity at Lesley College got their PhDs through them. You should also check out some of the small schools in California. There seems to be a great deal of potential to do that work there.
