Try the AT Journals at your local university
The two major american journals in art therapy are "Art Therapy" and "the Arts in Psychotherapy", and books by Harriet Wadeson are also very comprehensive and readable. I don't know any authors offhand that specialize in the populations you mentioned, but your university librarian should be able to help you (and probably will, even though you're not a student yet and may have to read or photocopy what you want on-site.)

PS: Remember to network like crazy at your practicums once you're in school, its the best way to get a job after graduation - so pick your practicum carefully.
